About Giovanni

Hello, my name is Giovanni, I am 36 years old and I come from Teramo, a beautiful city in the heart of Abruzzo region, Italy, where I grew up.
I started my career when I was a teenager in my homeland in five stars beach chalets and restaurants in the Adriatic coast, and twelve years ago I decided to move to London looking for a new step in my career, and live a new life experience abroad. What was supposed to be a 3 to 6 months experience transformed in 12 years of living and working in the city and hi-end hospitality.
My experience spans not only from luxury, fine dining and Michelin starred restaurants, but also in 5 stars hotels and busy venues (restaurants and fine dining banqueting only), such as the Italian Embassy in London for famous chef Danilo Cortellini, Social Eating House, Coda restaurant from Eric Chavot at the Royal Albert Hall, Social Eating House, 100 Wardour street, Advocate restaurant (private restaurant at Willis Tower Watson), Boulestin restaurant, Gastronhome and many more.

I also worked in extremely busy and iconic venues such as Wembley stadium, Stamford bridge, The Emirates Stadium, Tottenham Hotspur Stadium (VIP areas), Royal Ascot restaurants during the Royal week, The Kia Oval stadium, the Hilton hotel, Berkeley hotel, The Shangri-La hotel @ The Shard, Sheraton Park Lane hotel, The Trafalgar hotel, The Connaught hotel.

I also have +5 years experience as a catering business owner focusing in the private hospitality sector, organising events for big and small numbers: artistic and tasting dining experiences, fine dining cooking demonstrations, birthdays and private parties but also many cooking lessons and preparation of daily meals for VIP, UHNW and all other social background households.
I also collaborated with many cooking schools in London, Greater London area and prepared students for exams with culinary institutions such as The Cordon Bleu and Leight.
I specialise in Italian, Mediterranean, modern British and North European cuisine, but my knowledge includes influences from world food, because I travel the world tasting traditional and fine dining dishes and meeting with local suppliers, chefs and producers.
I also have experience working in pastry and can teach you how to make delicious desserts.
I have organised private events internationally in Scotland, Portugal and I met my mentor and favorite chef Salvo Lo Castro (previously chef of the Pope himself) in person during my latest trip in New York.
I am so lucky to have a direct contact with him and can learn directly from one of the best chefs in the world, with 3 cafes, one private catering business and a restaurant in Soho (all in New York City).

Once we agreed a date and time for the lesson, I will proceed in sending you the ingredients list and preparation instruction, so on the day you will be able to take a look at those while I teach you how do create delicious traditional, fine dining or Michelin star dishes, savory and sweet, anything you like!

I will arrive with my car and all the pro chef tools (aprons, chef whites, professional knives, tools if required, pasta machine, etc), so you can feel like you are in a restaurant.
However, the atmosphere won't be as stressful as it would be in a professional restaurant, but warm and friendly.
I come from central Italy and we are famous for being very laid back and I am a genuine extrovert person, that loves to meet new people, especially food lovers like myself.

During the lesson I will share with you the chef tips I have learned during decades of working in professional kitchen and give you more information about the ingredients and the history of the dishes we will cook together, if you wish.

You will have all the ingredients ready for the lesson and if you wish I can also suggest some of the best quality food you can find, that won't make a whole in your bank account and will be good not only for your palate, but also for your health.

Details

- Travel expenses included up until 45 minutes drive from the chef's office/home. Above 45 minutes there will be a £15 additional charge for travel time and petrol expenses.
- The price per hour does not include grocery costs. Ingredients will have to be purchased by the client and are considered on top. The chef is happy to suggest high quality ingredients that won't make a hole in your bank account
- Congestion charge and any other tunnel/tall charge will have to be paid on top
- Parking must be provided/paid for the chef

  • When did you start practicing? How did this passion find you?

    I started practicing when I was 12 as a home cook and when I grew up I decided to jump in the professional cooking industry. After many years of experience I realised that I wanted to bring the knowledge I gained in professional kitchen to people's home, and also that a lot of people are interested in evolve and upgrade their cooking skills.
    From the very first cooking lesson I could feel that was something I was really enjoying and the passion for my job was fusing with the one for teaching.
  • Which artists or works affect you the most?

    I have always been inspired by Michelin star and fine dining chefs and that is why during my career I decided to join that particular section of the industry.
  • What are the qualities and skill required to succeed in this area?

    Obviously you need to have a lot passion for what you do, than you have to be polite, reliable, you always have to think about the health and safety duties and also have a good knowledge of the subject you are teaching.
  • What is the most valuable advice you can give to help someone stay focused on creative projects?

    You have to be confident, believe in yourself and you have to create your own professional identity and teaching style.
  • How would you describe your passion; how does it make you feel?

    My passion for cooking probably started when I was kid and I was assisting my mother and grandmother in the kitchen.
    I believe that cooking is much more than just preparing something to eat: the smells, the colours and the freshness of the ingredients, the aromas and taste of the final dish all become different parts of a unique experience. That experience is than brought to its highest form in fine dining restaurants and my goal as a cooking teacher is to bring that type of experience from a professional kitchen to home and train the home cooks to be able to achieve it.
  • What creative achievements are you particularly proud of?

    I am proud of the whole experience I created during my group cooking lessons in which my students were not only looking at what I was doing but they were completely involved in making the dishes from scratch.
    They were assigned to different tasks and I was supervising their work.
    The students were able to end up with the desired results and they worked like they were in a professional kitchen.
    While doing that they also learned useful cooking skills.
  • Have you ever been surprised by a student; by their ability or quick progression?

    Yes I have been impressed from one in particularly: she really impressed me with her quick learning and putting in practice what I was teaching.
    She also had a natural talent when it was the time to plate the dishes.

    I guess the secret is a mix of different qualities such as the passion and professionality for what you do and teach, the reliability, the kindness and politeness towards your students and also the confidence in your own skill
