About James

Being a college level pastry arts instructor with over 20 years as an Executive Pastry Chef allows me to utilize all of my experience in teaching students the foundation of basic recipes to more advanced cake, bread and chocolate work. Recently I competed and won Food Network's Chopped season 45 episode 5 Chock Full of Chocolate. I have a strong passion for everything pastry, most notibly proper technique and perfect recipes. My teaching style reflects my experience as well as my patience and understanding of students personalities and goals. I truly enjoy the process of sharing my years of experience to students just starting out with baking pastry as much as working and advancing techniques with professionals. I have a personal love and respect for ingredients and technique to make delicious and beautiful creations. The passion for baking and pastry combined with my passion for teaching is what sets me apart from many well trained chefs. I have worked in many kitchens throughout the world and had many successes throughout my career to this day. I am published in many books as well as being on television for my talents and style. Still, the most rewarding aspect of my job is when students have that moment when they realize they created something truly special on thier own. I am here to help guide that .

As a chef we are always teraching our new employees. At a certain point in my career, I had an opportunity to teach at Johnson and Wales in Denver and found me calling. Passing on knowledge I have learned and acquired is very gratifying to me.

YStudents of all ages, just starting out, enthusiasts, professionals, disabled, vets. I enjoy working with anybody who has a passion for baking and pastry and who wants to learn good technique.

That I am very well versed in all things pastry and welcome any ideas you are willing to focus on. I will also have other suggestions for related items you might not of heard of or be interested in learning.

I love doing Celebrate the Craft each year in Del Mar as well as Mama's Kitchen events and Friendly Feast. All of these are charity events that I particapate with desserts.
