About Ro

In the 1990's, I started teaching in Michaels stores community centers, schools, and demonstrated at fairs. In 2008, I partnered with Palomar College to create a professional confectionery arts program at my studio (when I had a retail location). It was geared to workforce development and students coming from culinary schools that needed further training. In 2012, the college lost their grant, and all the workforce development programs were unfunded. Today I continue to teach to culinary students and other professionals needing the training.

For the business portion, I graduated from SDSU. For the industry portion, after college, I attended Confectionery Art School in Illinois, attended Pastry Courses - all courses taught by top professionals and Executive Pastry Chefs in the field. I am certified in Sugar Art, Fondant, Chocolate, Baking, and Decorating.

About the lesson

First and foremost is to determine the right fit. I teach high quality lessons - traning sessions, so my fees are a little higher than others. Usually, I will determine where their present skill set is - what do they want to learn? Do they have a kitchen where we can work in? Do they have the time to practice what they have learned? Once we discuss details, then I will conduct the lesson in their home or their bakery or their commercial kitchen. I will demo, then they will replicate what I show them. I teach in a patient way, and do not expect them to master on their first lesson. Some do, however many don't. It is all in the process, not just about setting lessons.

All types. From young to old. My main focus is the professional (i.e. bakery owners/employees) needing further training to home-based business owners. I am very choosy about the students I will accept to teach. They must be committed to learn.

They must be committed to learn. They must be committed to practice. They must be open minded, listen, and willing to apply proper technique. They must also respect the years of experience in both hands on with my business and with teaching others.

The Icing Smiles Charity. The San Diego Cake Show. Both contribute to sick kids in need. I am an advocate to give back to those in need.

A few things worth thinking about before reaching out
What do I want to learn exactly? Baking what? Decorating what? Why do I want to learn? What will I do with this training once I learn foundational techniques? Students need to know what they will use this education for.
