I've cooked on and off since 2000 in professional kitchens all around the states and mainly here in Louisiana. I only do it for my personal enjoyment IE family and friends these days as I work retail and have children but it's something I'll always be doing and enjoying and learning for as long as I can

My Approach would be dependence on the students and their capacity or base knowledge. Ideally the basis of the classes would be requested by the students as they're the ones who are the focus; from anything such as basic knife skills two vegetable cookery egg cookery 2 charcuterie and sauces and butchering as well as the dessert world and baking as well. My patience and easygoing nature has gotten me reputed as someone people are comfortable around and who can be themselves which I think is a tremendous complement
