About Rocco

Hello future Chefs.

My approach to cooking is simple, easy and fun. I am a graduate from the Cordon Bleu program and have been in the culinary field for over 25 years. Throughout my culinary career I have had the pleasure of working with some of the top chefs in LA whom are James Beard winners. My passion for cooking started as a child in Italy and was fortunate to experience how using local and seasonal ingredients to create easy delicious Italian dishes. It would be my pleasure to share my culinary knowledge and passion with individuals who want to explore this exciting field.

There are many things that I enjoy about the work that I do- Creating a new recipe, discovering a new spices and ingredients to construct a new dish or the science that goes into baking a cake. Most of all I enjoy the smiles that food brings to people's faces when they try a new dish, be it either an old favorite or a new creation.

It became inevitable that when I cooked at a party or had friends over for dinner that I would be asked on how I created the menu and executed the prepartions of the dishes. It became clear that everyone is curious about what happens when cooking and so it became the norm for me to explain and educate on the cooking process.

Graduate from Cordon Bleu culinary program and over 25 years of culinary experience, including several years of culinary instruction.

About the lesson

The first thing when meeting a new student is to establish their culinary level and experience. One needs to learn to walk before one can run. It's also important to know what is the goal of the student is. I will teach everything there is to know about a particular recipe, if that's what is desired. If they want strategies to become a better cook, I have a full range of lessons to accomplish that goal.

I have worked with an array of individuals from novices who are starting to learn how to cook to individuals with a good grasp on cooking.

It is important to work with an instructor one feels comfortable with and enjoys learning from. A good teacher is one that allows the student to learn the foundation of cooking processes so that the student is confident to use that knowledge to create and expand their own culinary journey.

The most recent event was the opening of 9 new restaurants in the new Tom Bradley Terminal at LAX.
