About Jam

My name is Jacqueline although I am widely and more commonly known as Jam. I'm a chef and baker from Carmarthenshire, South Wales. I have over 15 years experience and I've worked various roles throughout my career. All of which have involved a form of teaching and inspiring others through food which is why I now want to turn to it as a larger part of my career. 


Some highlights include working in The Warren, Carmarthen where I was Head Chef and helped develop their kitchen identity, systems and recipes they still use to this day. Introducing sourdough bread to their menu using organic and local flours. Through this I also worked with Glasbren CSA Farm and their veg box scheme, inspiring weekly veg box recipes, creating 'how to videos' and even holding seasonal feasts using their produce. 


After that and taking a step out to study, I worked alongside The Gaia Foundation and the Welsh Seed Sovereignty programme to help develop recipes using heritage grains such as the Black Oat and Hen Gymro. I was fortunate enough to hold a feast devoted to them with Gerald Miles at Caerhys Farm, where they had been grown, to share the historic event that was tasting them. This story was shared by the Guardian, Carwyn Graves and then by Kate Humble in her new cook book. 


My work as a whole has always been inspired by seasonal Welsh produce, the landscape and its heritage, devoted to telling its story through cooking. My first and foremost passion is baking and bread being at the top of that list, this comes from a deep love of preserving and fermenting foods - also doing this with my grandmother as a child. Food for me is a language - connects us through culture, heritage and memory and to share that with anyone in any form is an absolute pleasure.
